These muffins are rich, delicious, a snap to prepare, and perfect for breakfast or snacks or gifts for a new mom! They are sweet, but not too sweet, and have a crunchy, sugary tops that is pure delight!
Pecan Pie Muffins
1 cup packed light brown sugar
1/2 cup all-purpose flour
1 cup chopped pecans
2/3 cup softened butter
2 eggs beaten
You can use any size muffin tin for this recipe. Recipe makes 5 giant muffins, 8 regular muffins, or 12 mini muffins. Grease your tins with Pam or Baker's Joy.
Preheat oven to 350 degrees. In a medium bowl, stir together brown sugar, flour, and pecans. In a separate bowl, beat the softened butter and eggs together until smooth. Stir into the dry ingredients just until combined. Spoon the batter into the prepared muffin tins...about 2/3 full. Bake for 20-25 minutes. (I baked them in regular muffin tins @19 minutes and they were perfect. Depends on your oven).
These muffins are definitely best served warm, preferably straight from the oven with a pat of butter!
