Cantina Laredo has some of the best fresh guacamole I have ever tasted, so last time I ate there, I paid close attention to the ingredients, tweaked them a bit, and came up with a recipe to make at home. You can adjust the ingredients, as well, to suit your taste.
2 Haas avocado (dark green and a little soft)
1 plum tomato, chopped
1/4 piece of a small purple onion, chopped very fine
1/2 fresh jalapeno pepper (I use 1/4 or even less)
2 T. fresh Lime juice
1/4 teaspoon salt (or a bit more)
1/4 teaspoon pepper
2 T. fresh cilantro chopped
sprinkle of garlic powder
First, squeeze about 2 T. fresh lime juice into a bowl. Add your salt, pepper, garlic powder and mix. Scoop out avocado filling and mash with a fork in a small bowl.
Add avocado, jalapeno, tomato, onion, and cilantro to lime juice mixture. Serve immediately with warm tortilla chips.
