Parmesan Chicken

This easy and tasty Parmesan Chicken is great for a weeknight meal.  Even my picky eaters enjoy this chicken and come back for seconds.  And trust me, that is rare:) 
Chicken Parmesan

**I half this recipe when using only 4 chicken breasts.  Make full recipe when preparing more than 4.

1 1/2 cups Italian bread crumbs
1/2 cup parmesan cheese
1 T. salt 
1 t. pepper
6 boneless, skinless chicken breasts
1 stick butter OR 2 eggs beaten (for dipping chicken before breading)

Spray glass baking dish with Pam.  In medium bowl, melt butter OR beat 2 eggs.  Set aside.  Combine first 4 ingredients in another medium bowl.  Dip each chicken breast in butter or egg wash.  Then coat in dry ingredients mixture.  Arrange breaded chicken breasts in baking dish.  Bake uncovered at 375 degrees for about 40-45 minutes or until desired brownness has occurred.  We like ours a little crispy, so will bake a bit longer.  

This chicken is great served with simple green beans and hashbrown potato casserole OR atop angel hair pasta with your choice of red sauce.
