Mini Sausage/Cheese Cups

Mini Sausage/Cheese Cups
Do these not look scrumptious?  They were posted last week on GreenDoorDesigns,  and knew I had to try them!

There are only 3 ingredients in the mixture, which makes it all the more appealing for throwing a nice appetizer together in a small amount of time.

Mini Sausage/Cheese Cups

2 pkgs mini fillo cups
1/2 lb. ground sausage (I froze other 1/2 for later use)
1 cup shredded sharp cheddar cheese
prepared Ranch dressing
diced olives (optional)

Brown sausage and drain.  Combine all ingredients except fillo cups in a small bowl and mix well.  (when adding the Ranch, I probably used about 2 T. or a little more...just til mixture was a nice consistency and sausage was coated).
Place fillo cups on a cookie sheet and fill with sausage mixture.  Bake at 350 degrees for about 10 minutes or so.
**You can also flash freeze these by filling cups, placing on cookie sheet, stick in freezer until frozen, then transfer into freezer ziplocs for an easy, pull-out-of-the-freezer-appetizer!

Enjoy!  You can't eat just one:)
