Bar-b-que Chicken Pizza

I recently posted my hubby's ham and artichoke pizza, and last week he made a new creation.  When we were dating and newly married living in Oxford, MS, our favorite pizza joint, Old Venice, sold a pizza called "The John Wayne."  This is our version that is easy and homemade!  Give it a try!

Bar-b-que Chicken Pizza

1 pkg Martha White pizza crust mix
canola oil
1-1 1/2 cups cooked, chopped chicken (we baked a couple of boneless, skinless breasts with salt and pepper...325 degrees for about 30 minutes or so.  You can use any leftover grilled chicken, rotisserie chicken, or prepackaged grilled chicken)
bar-b-que sauce (we used Sweet Baby Ray's, but any will do)
1/2 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
1/4 small purple onion, diced small
grated Parmesan
crushed red pepper flakes (optional)

Preheat oven to 475 degrees.  Follow directions on back of Martha White package to prepare dough.  Optional: coat the dough ball with canola oil and allow to rise in a warm place, covered, for a few minutes.  Form crust onto pizza pan or stone.  Bake crust for about 5 minutes or until it begins to brown.  Remove from oven.  Spread desired amount of  bbq sauce to 1/2 inch from crust's edge.  Sprinkle mozzarella and cheddar over entire pizza.  Then arrange purple onion on pizza.  You can add more of any ingredient if you prefer.  Bake about 7 minutes at 475 degrees or until done.  Sprinkle freshly grated or prepared parmesan cheese and red pepper flakes.  Enjoy!
