Chicken Avocado Sandwich

This easy, but tasty chicken sandwich has become one of our go-to meals when we don't want to spend a lot of time in the kitchen.  Create your own version or try this one next time you want quick, easy, weeknight meal!
Chicken Avocado Sandwich

Boneless chicken breasts 
Wishbone Italian dressing (for marinade)
whole wheat buns
1 avocado
1 tomato
1 purple onion
mayo
lettuce

Marinate chicken breasts for 30 min to an hour in Italian dressing in a ziploc bag.  Remove from marinade and grill over medium heat until internal temp is 180 degrees.  You can also bake in oven at 350 degrees for about 45 minutes on a grill pan where juices can drip down onto foil liner.  When chicken is finished cooking, place on cutting board to slice breasts in half, slicing horizontally, if you prefer a thinner sandwich.  (This also stretches your meal!)

Cut a few slices of fresh avocado, fresh tomato, and finely sliced purple onion.  Arrange chicken, lettuce, avocado, tomato, and purple onion on bun.  Spread a little real mayo and your sandwich is ready to enjoy!

We love sweet potato fries with this sandwich.  They can be found in your grocer's freezer.  They are extra yummy sprinkled with Lawry's seasoned salt and baked in oven on broil, making them extra crispy!
