Angel Hair-Tomato Basil Toss


Believe it or not, this delicious recipe originates from the back of the box of Kroger brand angel hair!  This dish is full of flavor, easy to fix, inexpensive, but elegant enough for company!

1/2 cup olive oil
2 cloves fresh garlic, minced
1/4 cup sliced green onions
14 1/2 oz can petite diced tomatoes, drained
2 T. chopped fresh OR 2 t. dry basil
1 t. salt
1/4 t. ground pepper
1/2 (16 oz) pkg angel hair
Grated fresh Parmesan cheese
shrimp or chicken if desired (picture above is shrimp and chicken)

If you are using shrimp or chicken, cook bite-sized pieces in a little bit of oil, salt and pepper til no longer pink.  Set aside and add to dish after all else is mixed together.

In large skillet, heat oil.  Add garlic and green onions;  stir-fry one minute( it will burn beyond a minute!)  Stir in tomatoes, basil, salt and pepper.  Cook 2 minutes.  Stir frequently.  (I cook mine longer while I'm preparing other things)  Prepare angel hair; drain.  Toss tomato mixture with hot cooked pasta.  Serve immediately.  Sprinkle with parmesan cheese.

Serve with a tossed salad and take and bake bread from Kroger and you have a beautiful meal!

So glad to have found this after my copy (torn from the back of a krogers pasta pkg) finally deteriorated! I use shrimp with this and typically add chopped artichoke hearts and feta..sometimes broccoli too..so good!
