Savory Pimiento Cheese

If you are not a born and raised Southerner, this recipe may be a little different for you, but down here, we LUV us some "mina cheese," and this is by far the yummiest I've had. (if you aren't born and raised a Southerner, I'm also so sorry honey!) Now McDade's grocery in Jackson MS has the best store-bought, but this is the best you can make! This recipe was put together with love by my great-aunt and cousins from Mississippi, Frances Massey Watkins, Cherry Watkins Dunn, and Rachel Watkins Julian. (tweak this to your liking)

Sharp Cheddar (1.5-2 lb), shredded (mix of white and yellow is prettiest)
8 oz. cream cheese, room temp
2 cloves garlic minced
juice of 1 to 2 lemons
green onions chopped very fine (just a few)
dash of Tabasco (I use about 10...we love it)
1 to 3 t. chipotle peppers in adobe sauce...just liquid...(I omit this)
few dashes of worchestershire sauce
REAL mayo, enough to wet...I put several Tablespoons
1 large or 2 small jars diced pimientos drained

Mix until smooth. (Mixer is easiest) Then add pimentos.
Adjust amounts to make smaller or larger portions.

We love this for breakfast melted on toasted Sourdough bread or let it sit to soften and put it on yummy white bread for a real Southern treat.
