Hash Brown Potato Casserole

Every good Southern girl needs a good recipe for Hashbrown Potato Casserole. You can fix this comfort dish for a side at dinner or for a potluck item for a big breakfast. Either way, they'll be scraping the dish!

2 lb bag frozen SHREDDED hashbrowns (NOT CUBED)
Break apart potatoes in bag.

1 pt. sour cream
2 cups grated sharp cheddar
1/4 cup finely chopped onion
1 can Cream of Chicken
1 t. salt
1 t. pepper
1 stick melted butter

Crushed Ritz or Saltines or mixed. Or Crushed cornflakes. (Topping)
Melt butter in microwave and mix all ingred. except crackers or cornflakes. Pour into greased 9 X 13. Sprinkle crackers or cornflakes on top. Bake at 350 for 45 min or longer. Til Bubbles.

Can be easily halved or you can bake whole recipe, then freeze leftovers for a dinner later in the month!
